Ingredients:
1 cup finely chopped onion
1 tomato, finely chopped
1 green chilly
1 cup potato, cut into small pieces
1 cup carrot, cut into small pieces
1 cup eggplant, cut into small pieces
1 tsp mustard
1 tsp channa dal
1/2 tsp sambar powder
4 tsp besan flour
Few curry leaves and corriander leaves
Salt to taste
Preparation:
- Heat 2 tsp oil in pressure cooker.
- Add mustard, once it splutter, add channa dal and onion.
- When onion turns golden brown, add tomato,green chilly and curry leaves.
- Sauté till tomato becomes soft.
- Add all the vegetables and keep stirring for few minutes.
- Now add sambar powder, salt and 2 cups water.
- When it starts boiling, close pressure cooker and wait for 3 whistles.
- Mix besan flour with 1/2 cup water without lumps.
- Once the pressure released, open the pressure cooker and add besan mixture.
- Cook till kosthu becomes slightly thick.
- Garnish with corriander leaves.
- Serve hot with idly or dosa.
