1 pound fresh spinach leaves
2 tbsp all purpose flour
2 tbsp butter
2 tbsp chopped onion
1/2 cup milk
1/2 cup shredded Mozzarella cheese
1 egg yolk
3 egg whites
salt
pepper
Method:
- Preheat the oven to 350 degree F.
- Cook spinach in salted boiling water for 5 min. Squeeze spinach to remove excess water and chop it nicely.
- Melt the butter in a pan and add onion. Stir until it turns golden brown.
- Then add flour, salt and pepper.
- Slowly add milk and stir it immediately. Make sure there is no lump.
- Cook until it thickens.Remove from pan.
- Add egg yolk, spinach and cheese.
- In another bowl, beat egg whites until it forms stiff peak.
- Fold the egg white in the spinach mixture.
- Apply some butter in the souffle bowl, moving the butter from bottom to top. It helps to raise the souffle.
- Pour the spinach mixture into the bowl and bake it in the oven for 45min. or until toothpick inserted in the center comes out clean.
