Sweet Corn Bread

Ingredients:

1/2 c corn meal 1 1/2 c flour

2/3 c sugar 1Tblsp baking powder

1/2 tsp salt 1/3 c oil

2 eggs 1 1/4 c milk

Directions:

Combine corn meal, sugar, flour, baking powder, salt and stir.

Add oil, melted butter (still works great without this extra fat), eggs,

Milk and mix for about 1 1/2 minutes. Pour into greased 8-inch-square

Baking dish. Bake at 350 for 35 minutes until lightly golden brown

On top. For muffins: spoon batter into 18 to 20 greased or paper lined muffin

Cups filling 2/3 full. Bake at 350 for 18 to 20 minutes.
