Alison’s recipe (I use this recipe for the rolled in butter and sugar muffins! They are DELICIOUS!! And good plain as well, just a hint of eggnog.)
1/2 c. butter, softened
3/4 c sugar
2 eggs
1/2 tsp vanilla
1/2 tsp almond extract
2 tsp baking powder
1 tsp nutmeg
1/4 tsp salt
2 1/4 c flour
1 c eggnog commercial
Preheat oven to 350. Spray muffin tins or line with papers. Beat butter ‘til creamy. Beat in sugar until fluffy. Beat in eggs, one at a time. Beat in extracts, followed by baking powder, nutmeg and salt. Mix in flour and eggnog. Scoop into cups. Sprinkle with 1 Tsp sugar mixed with 1/4 tsp nutmeg, if desired. Bake 25 min. or until golden brown. Makes 12.
