Pumpkin Squares

This makes a big cookie sheet full, so it’s good for entertaining, church pot lucks, or eating some and giving a plate away!

Beat until fluffy

4 eggs

1⅔ cup sugar

½ cup vegetable oil

½ cup apple sauce

2 cups pumpkin (or squash from Mom’s garden that you have in your freezer, because she’s always looking out for you!)

Mix separately and add to pumpkin mixture (I don’t do this-I just add them one at a time while the bosh is running!)

2 tsp. baking powder

2 tsp. cinnamon

1 tsp. baking soda

1 tsp. salt

2 cups flour (I have used whole wheat and it works great)

Pour into 18x12 greased cookie sheet and bake 25-30 minutes at 350º.

Top with Cream Cheese Frosting
