Best Ever Cookies

These are the only cookies Justin wants me to make, every time I try something new, he says they’re not as good!

Cream together:

2 c. brown sugar

2 squares butter or margarine

2 eggs

Add 1 Tbs. hot water and beat again.

Add and mix well:

1 tsp. soda

1 tsp. baking powder

Change to kneading hook, add and mix well

2 c. Flour

2 c. Oats (quick or regular work fine)

1 c. coconut

1 c. chocolate chips (I do closer to a whole package-don’t tell mom!)

Chill for 1 hour. Roll into balls and in powdered sugar (I do this all at once and keep balls in a bowl so that my hands are gross all at once and not the whole time I’m baking.) If you’re lucky you can Tom Sawyer your kids into loving the rolling of cookies in powdered sugar and keep your hands semi clean!

Bake 8-9 minutes at 350º. Let cookies sit on cookies sheet for 1 minute before moving to cooling rack. I make a double batch and freeze the cookies into ziplocks of 5-6 cookies and they last a lot longer than if they are sitting out on the counter in a cookie jar!
