Place dry ingredients in a bowl, put wet ingredients in a separate bowl and
blend. Beat egg whites stiffly in a third bowl (Let Brett do the dishes tonight!)
2 cups flour
2-2½cups milk
1 Tbs. Cinnamon
1 Tbs. Vanilla
½ tsp. Nutmeg
1 cup prepared Pumpkin (or squash from the garden!)
2 Tbs. Baking Powder
1 Tbs. Sugar
½ cup melted margarine
½ tsp. Salt
4 egg yolks
4 egg whites whipped stiff
Add wet ingredients to dry (add milk if batter seems dry) Once blended fold in the stiffly beaten egg whites. Put into a hot waffle iron (the batter “grows”, so experiment to see how much batter makes a waffle-mine is about a 1/2 C.
