270g of Masa Flour (2 cups)
460g of Room Temp Water (2 cups)
1.In a mixing bowl add in the masa flour and slowly incorporate the water. Mix for about 3 minutes. (You can also add salt, in my family we have never added salt to the masa)
Note: if the masa is sticking to your hands, slowly add in more masa flour. Or if the edges of your tortillas start cracking, it means that it needs more water.
2.Shape your tortillas to your preferred size by using a press or by hand.
3.Heat up your comal (griddle) at medium high heat. Place your tortilla on the hot comal.
4.Once the edges of the tortillas start to change color, flip. This avoids trying out either side of the tortilla.
5.When that side is brown, flip and the tortilla should inflate.
6.If the tortilla doesn’t inflate singly press down in middle and edges to give a little push. You can also use a spatula for this part.
7.Place in a clean kitchen towel and continue to stack as you go.
8.Enjoy with your favorite dish!
