Caldo de Pollo
Ingredients:
10 Cups of water
6-8 Small potatoes
1 Güiisquil (Chayote squash)
2 medium carrots
1 Yellow onion
1 tomato
2 1/2 tablespoons of chicken bouillon
2 tsp of salt
1 whole chicken
Cilantro for garnish.
DIRECTIONS:
Peel and slice all your veggies.
Cut the chicken into pieces to your preferred size (if using a whole chicken).
Heat up the water at medium/high heat and add in the salt and chicken bouillon. Once it starts to lightly bubble add in the sliced onions and tomatoes and let it boil for 15 minutes.
Next, add in the chicken and let it boil for another 15 minutes.
Once the 15 minutes pass, add in the veggies (carrots, chayote, and potatoes) and let cook for another 15 minutes or until soft.
Once done, garnish with cilantro and enjoy!
