Ingredients:
2lb of Top Sirloin (sliced into bug cubes)
5 small potatoes
1 large carrot
1 tsp salt
1/2 tsp ground black pepper
1/4 white onion (diced)
2 garlic cloves (diced)
3 bay leaves
2 tsp beef boullion
3-5 tyme leave
Sauce
2 garlic cloves
1/2 an onion
1 ancho chile (deseeded)
1 guajillo chile (deseeded)
3 tomatoes
1 1/2 cup of water
1 tsp salt
1 tsp achiote paste
Recipe:
In a pot add oil and the garlic cloves, 1/2 and onion, ancho, guajillo chile, tomatoes and salt; sir fry until the onions are translucent. Add the water and cook for about 10 minutes until the veggies are soft.
Allow the veggie broth to cool and add into a blender with 1 tsp of achiote paste. Blend until smooth.
To a hot pan add oil, the diced onion and garlic. Add the cubed sirloin chunks along with salt, pepper, beef boullion, thyme and bay leaves. Make sure to get a nice sear on the meat.
Once theres a nice sear on the meat add in the sauce, cook for about 1hr at low medium heat until the meat is nice and tender.
Then add in the potatoes and carrots, continue to cook for about 30 minutes.
