Calabaza en Dulce
2lb of Pumpkin
13oz of Panela (Piloncillo)
3 Cloves
1 Star Anise
1/2 Cinnamon stick
1 cup of Water
Steps:
Slice and deseed the pumpkin (deseeding is optional) and crush the panela into pieces.
2. In a pot, add first layer of pupkin skin facing down. Add in half the panela, cloves, star anise and cinnamon.
3. Add the second layer of pumpkin skin side up, the rest of the panela and 1 cup of water.
4. Cook on medium heat for 1 hour checking on it every 15 minutes to ensure all pumpkin gets submerged.
5. Once you see it reduce into a syrup, cool for a couple minutes and its ready to serve and enjoy!
