Albóndigas (meatballs):
1lb of beef
1 tsp of Salt
1/2 tsp of Black pepper
1/2 tbsp of Onion Powder
1/2 tbsp of Garlic powder
1/2 cup of Tomato (diced)
1/2 cup of Onion (diced)
1/3 cup of Cilantro (diced)
Broth:
8 cups of Water
17 oz Beef broth
2 packets of Chicken Bullion
2 tsp of Salt
1/2 a Onion
1 Tomato
1/3 cup of Cilantro
12 oz of Potatoes
1/2 Cabbage head
1/2 Acorn squash
1.Add ground beef in a bowl and mix in salt, black pepper, onion powder, garlic powder, chopped onions, chopped tomatoes and chopped cilantro.
2.Shape your meatballs.
3.Boil the water and beef bone broth. Once boiling add half an onion, a tomato cut in half, salt and chicken bouillon. Boil for 5min.
4. Next, add in the potatoes and corn (this takes a bit longer to cook). Boil for another 5 min.
5.Add in the meatballs and cook for 10-15 minutes. (Medium to high heat)
6.Add in the acorn squash and cabbage. Cook for about 5-8 minutes.
7.Garnish with cilantro and enjoy!
