Ingredients:
Cake Mix:
1 1/2 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
7 eggs,
1 1/4 cups of sugar
1 1/4 tsp vanilla extract
1/2 cup whole milk
Syrup:
1 can (12 oz) evaporated milk
1can (14 oz) sweetened condensed milk
3/4 cup heavy whipping cream
Whipped Cream Frosting:
3 cups heavy whipping cream
1/2 cup of powder sugar
Recipe:
Prep your ingredients (separate the egg yolk from the egg whites, pre measure all ingredient, chop your fav fruit for the middle filling, and have your garnish ready) makes the process a lot easier.
In a bowl add in the flour, baking powder and salt.
In second bowl, add in the sugar, egg yolks and milk and mix until it turn into a pale yellow color and see the consistency start to thicken.
In a third bowl, add in the egg whites and vanilla and beat until you get stiff peaks.
Now mix in the dry ingredient into the egg yolk mix in a folding motion to keep it light and airy. (You want a lot of air-pockets in the sponge cake so it can absorb all the syrup).
Once fully combined, repeat with the egg whites. Add it into the batter folding it in.
Pre-butter a casserole dish (I used 9x13). Bake at 350 for 35-40 minutes.
Once its done baking, let it cool. Once it's cooled gently remove it from the casserole dish and slice it in half (horizontally) so you have a top and bottom piece. This part is totally optional, you don't have to have a filling.
For the syrup, in a big measuring cup (or container) add in the sweetened condensed milk, evaporated milk, heavy cream and mix.
Place the bottom piece back into the casserole dish and evenly pour in half of the syrup.
Now make the whipped cream, I like to make it right before I use it. It's best to keep the heavy cream as cold as possible when whipping. Add the heavy cream into a bowl and add in your powdered sugar. Using a hand mixer, mix until you see it get thick and starts to create stiff peaks.
Note: Don't over mix the heavy cream as it will turn into butter.
Add the whipped cream on the bottom piece, add in your filling and also add whipped cream onto the top piece of the cake and lay it right on top. You want to make sure that the middle is nice and moist.
With a fork, poke holes on the top of the cake, and evenly pour the rest of the syrup. This ensures that the cake soaks up all of the sweet syrup.
All thats left is to add the rest of the whipped cream on top of the cake and garnish with your favorite fruit.
