Spicy Pickled Onions
2 onions
2 small jalapeño (1 giant jalapeño like mine)
1 1/2 cup of water
1 1/2 cup of white vinegar
2/3 cup of light brown sugar
1 tbsp of salt
3-4 Bay Leaves
5-6 Cloves
1.Slice the onions and Jalapeños. Separate all onion layers.
2.In a pot add in the water, vinegar, sugar, salt, bay leaves and cloves. Allow the mixture to come to a boil and set aside.
3.In a jar add in a layer of onions and then a layer of jalapeños. Keep doing this until you’re all out.
4.Add in the water/vinegar mixture into the jar of onions and jalapeños. Set aside to cool. Once cool, cover and refrigerate the pickled onions overnight.
5.Add to tacos, sliders, anything and everything! Enjoy!
