3-4 lb of pork
1/4 cup of vinegar
1 cup pineapple
1 small onion
2 tsp of salt
1/2 tbsp of black pepper
1/2 tbsp of garlic powder
1/2 tbsp of onion powder
1 1/2 tsp mexican oregano
1 tsp cumin
5 garlic cloves
2 Guajillo peppers
2 Ancho peppers
3 Chipotle peppers
2 tbsp of achiote
2 Pineapple slices
In a bowl add your sliced pork, vinegar, salt, black pepper, onion powder and garlic powder and mix. Set aside while you work on the marinade.
In a pot, hydrate the de-seeded guajillo, ancho, and chipotle peppers for 10 min.
After boiling strain and add them into a blender with the achiote, pineapple, garlic cloves, onion, oregano and cumin.
Add the blended ingredients into the bowl of seasoned meat. Mix well and allow it to marinate for at least 5 hours (For a tender and stronger flavor allow it to marinate for 12-24hrs.)
Place one pineapple slice down into a vertical Skewer Pan, and stack up the pieces of the marinated pork. Continue to stack it up while it’s nice and tight. Once all the pieces of meat are stacked, top off with another slice of pineapple.
Roast at 375F until the pork reached an internal temp of 195.
Note: If you don’t have a vertical skewer pan you can grill or pan fry the Al pastor meat.
