Tomato Barbecue Sauce

2 lbs. Heirloom Tomatoes (Quartered)

3 each Sweet onions (Peeled and Diced)

2 Sweet Peppers (Seeded and diced)

2 Jalapeno Peppers (seeded and diced)

1/4 cup Molasses

1/4 cup Dark Soy Sauce

1/2 cup Red Wine Vinegar

1/2 lb. Bacon (large dice)

1 tsp cinnamon

1/2 tsp cloves

Salt and pepper to taste

Pinch fresh thyme

1/2 cup butter, cubed

In a large suacepan over medium heat brown the butter. Add the smoked bacon and brown. Add onions and peppers and cook until slightly caramelized. Add tomatoes and cook until they begin to bread down. Add vinegar, molasses, dark soy,spices and thyme. Cook until tomatoes break down. Remove bacon pieces and transfer to a blender. Puree on high until smooth and pass through a fine sieve. Place saauce back in a sauce pan and reduce until desired consistency, stirring often. Season with salt and pepper to taste.
