Caramelized Onion-Balsamic Barbeque Sauce

6 Red onions or Red Spring Onions (Sliced thin)

1/4 cup brown sugar

2 oz. maple syrup

3 cups aged balsamic vinegar

2 qts chicken stock

1 qt beef broth or veal stock

salt and pepper to taste

3 sprigs of rosemary (chopped)

Heat a sauce pot over medium-high heat. Once the pot begins to get hot, add 2 tablespoons of cooking oil and stir in the onions. Saute while stirring until the onions begin to caramelize. Next add the brown sugar and stir until melted. Then add balsamic vinegar, reduce your liquid down until it becomes a syrupy consistency. Add the rest of the wet ingredients and reduce the liquid until it is at the consistency you desire. Use sauce to baste Beef Short Ribs.
