Garlic-Soy & Vinegar Barbecue Sauce

1 Red onion (rough dice)

6 green onions chopped

20 cloves garlic sliced

1/4 lb. ginger (peeled and sliced)

6 oranges (peeled and juiced

1 bunch cilantro chopped

1/2 cup Mirin

1/2 cup rice wine vinegar

1/4 cup brown sugar

6 cups soy sauce

Heat a saucepan over medium-high heat. Once the pot begins to get hot add 2 tablespoons cooking oil and stir in garlic, onions and ginger. Saute while stirring until onions begin to caramelize. Next add your brown sugar and stir until melted, then add all of your wet ingredients including the reserved orange peels, turn your liquid down until it comes to a slow simmer. Reduce the liquid until it is the consistancy you desire. Strain out the solids and reserve the liquid. Use as a basting sauce for your ribs.
