So Easy Egg Fried Rice
Ingredients:
4 slices thick bread (sourdough is awesome for this!)
1/2 lb shrimp, peeled and deveined
3 tablespoons butter, melted
2 cloves garlic, minced
1/2 cup shredded mozzarella cheese
1/2 cup shredded provolone cheese (or your favorite melting cheese blend)
1 tablespoon fresh parsley, chopped (for mixing with butter and garnish)
Pinch of red pepper flakes (optional, for a little kick)
