Airfryer Pineapple Chicken and Rice

Ingredients:

1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes

1 (20 ounce) can pineapple chunks, drained (reserve 2 tablespoons juice)

2 cups cooked rice (preferably day-old)

1/4 cup soy sauce

2 tablespoons honey or brown sugar

1 tablespoon rice vinegar

1 teaspoon grated fresh ginger (or 1/2 tsp ground ginger)

1 clove garlic, minced
