1 block extra-firm tofu, pressed and shredded
1/3 onion, chopped
1/3 red pepper, chopped
2 tablespoons olive oil
2 tablespoons tomato sauce
Al pastor seasoning blend
Salt and pepper to taste
1 bunch cilantro, stems removed
4 tablespoons mayonnaise or yogurt
Juice of 1/2 lime
2 cloves garlic
Salt and pepper to taste
Tortillas
Coleslaw
Cilantro for garnish
Blender or food processor
Heat olive oil in a large skillet over medium heat.
Add the shredded tofu and cook until golden brown, stirring occasionally.
Add chopped onion and red pepper, cook until softened.
Stir in tomato sauce, al pastor seasoning, salt, and pepper. Cook for a few more minutes, or until heated through
In a blender, combine cilantro, mayonnaise or yogurt, lime juice, garlic, salt, and pepper.
Blend until smooth.
Warm the tortillas.
Fill each tortilla with the tofu filling, coleslaw, and cilantro lime sauce.
Garnish with additional cilantro.
