120g oat flour (1 cup)
100g pecans (1 cup)
2 tbsp + 2 tsp psyllium husk
1/3 cup water
1/4 cup maple syrup
155g dates (1 cup)
3 tbsp maple syrup
2 tbsp water
Salt (to taste)
3 teaspoons cinnamon
Soak psyllium husk in water.
Blend pecans into fine crumbs.
Combine oat flour, pecan crumbs, psyllium husk mixture, and maple syrup in a food processor.
Blend until a dough forms.
Press the dough into a rectangle on parchment paper (about 25-27cm long and 0.5cm thick).
Blend dates, maple syrup, water, salt, and cinnamon until smooth.
Spread the filling evenly over the crust, leaving a 1-2cm border.
Roll the dough tightly using the parchment paper as an aid.
Refrigerate the log overnight.
Slice the log into individual rolls.
