This creamy and indulgent vegan ice cream is made with simple ingredients like pistachios, coconut cream, and maple syrup. It's a perfect treat for any occasion.
100g unsalted, shelled pistachios
30g cashews
400ml coconut cream (thick part from a chilled can)
1 cup soy milk or other plant-based milk
1 pinch salt
1.5 tsp vanilla extract
1/3 cup maple syrup (to taste)
Soak pistachios and cashews in boiled water for 20 minutes. Drain and rinse.
In a blender, combine soaked nuts, coconut cream, soy milk, salt, vanilla extract, and maple syrup.
Blend until smooth and creamy.
Pour the mixture into ice cube trays and freeze for 1-2 hours.
Transfer frozen cubes to a blender with a splash of soy milk.
Blend until the desired ice cream consistency is reached.
Serve immediately or freeze for a firmer texture.
Top with crushed pistachios and a drizzle of caramel or syrup.
