4 tablespoons grated ginger
1 large lemon, sliced into triangles
Agave or date syrup (optional)
Water
In a small saucepan, combine grated ginger and 3 cups of water.
Bring to a simmer, then reduce heat and simmer for 10 minutes.
Remove from heat and let steep for 5 minutes
In a blender, combine cilantro, mayonnaise or yogurt, lime juice, garlic, salt, and pepper.
Blend until smooth.
Add 1-2 ginger lemon cubes to a mug or insulated bottle.
Pour hot water over the cubes.
Sweeten with agave or date syrup, if desired.
Enjoy hot or chilled.
Tip: Use a large straw to avoid biting into the lemon slices.
