Indulge in these refreshing and healthy popsicles. Made with creamy cashew-based ice cream and a sweet strawberry coating, these treats are perfect for a summer day.
1 cup raw cashews, soaked
4 large Medjool dates, pitted
1 cup plain dairy-free yogurt
2 tablespoons lemon juice
1 teaspoon pure vanilla extract
3 cups frozen or fresh strawberries, chopped
1/4 cup coconut milk
1-2 tablespoons pure maple syrup
1 tablespoon chia seeds
Soak cashews in water for 2 hours or overnight. Drain and rinse.
Blend soaked cashews, dates, dairy-free yogurt, lemon juice, and vanilla extract until smooth.
Pour the mixture into silicone popsicle molds and insert sticks.
Freeze for at least 4 hours
Blend strawberries, coconut milk, maple syrup, and chia seeds until smooth.
Remove popsicles from molds.
Dip each popsicle into the strawberry mixture.
Place on a parchment-lined dish and freeze for 30 minutes.
