5 potatoes
2/3 cup grated Parmesan cheese
1 2/3 cups all-purpose flour
1 1/4 cups cold water
Extra virgin olive oil
Fine salt
Fresh rosemary (or your favorite herbs)
In a large bowl, combine flour, cold water, Parmesan cheese, a drizzle of olive oil, and a pinch of salt. Mix until smooth.
Using a mandoline slicer, thinly slice the potatoes.
Add the sliced potatoes to the batter and mix until well coated.
Line a baking tray with parchment paper and lightly oil it.
Spread the potato and batter mixture evenly onto the tray.
Drizzle with more olive oil and sprinkle with fresh rosemary.
Preheat oven to 400°F (200°C).
Bake the flatbread in the lower part of the oven for 20 minutes.
Move the tray to the middle of the oven and bake for an additional 20 minutes, or until golden brown and crispy.
Let the flatbread cool slightly before cutting into pieces.
Serve hot.
