1 cup sliced ginger
2 1/2 cups water
5-6 tablespoons maple syrup
Juice of 1 1/2 lemons
Sparkling water
In a medium saucepan, combine sliced ginger and water.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Strain the ginger syrup into a jar.
To the ginger syrup, add lemon juice and maple syrup. Stir to combine.
Fill a glass with ice.
Pour a quarter of the ginger syrup mixture.
Top with sparkling water.
