1 ½ cups mashed ripe bananas (about 4 large bananas)
⅓ cup peanut butter
⅓ cup olive oil or canola oil
½ cup unsweetened almond milk
½ cup coconut sugar
1 teaspoon vanilla extract
½ teaspoon salt
1 cup all-purpose flour or white whole wheat flour
½ cup unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon baking soda
2 teaspoons cinnamon
½ cup vegan dark chocolate chips (optional)
Preheat oven to 350°F (180°C). Grease and line a 9x5-inch loaf pan with parchment paper.
Mash the ripe bananas until smooth.
In a large bowl, combine mashed bananas, peanut butter, olive oil, almond milk, coconut sugar, vanilla extract, and salt. Mix well.
In a separate bowl, whisk together flour, cocoa powder, baking powder, baking soda, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in chocolate chips if desired.
Pour the batter into the prepared loaf pan.
Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
Cover with foil after 30 minutes to prevent over-browning.
Let the bread cool in the pan for 2-3 hours before slicing.
Serve with a drizzle of melted dark chocolate or a dollop of peanut butter.
