FOODS I - 3603 (One Term)


Grades 9, 10, 11, 12

Course Description: Students will gain an understanding of basic nutrition as well as food preparation skills. While learning to prepare a variety of foods, students will explore ways to improve their own diets and eating habits. We will cover safety and sanitation, measurements and equipment, nutrients and how they work, health challenges, fruit, vegetables, eggs, quick breads, and yeast dough.


FOODS II 3604 - (One Term)

Prerequisite: Foods I

Grades 9, 10, 11, 12

Course Description: This course is an extension of the Foods I curriculum. Students will continue to explore ways to improve their own diets and eating habits as we expand our study of the different types of food. You’ll be introduced to herbs and spices, stocks, sauces & soups. We’ll also take a closer look at bacteria and other food safety issues. Successful completion of this course provides students with the opportunity to take the ServSafe exam for certification and earn 1 credit of Sanitation and Hygiene from Gateway Technical College. BAKING AND PASTRY ESSENTIALS - 3610 (One Term)


Prerequisite: Foods I

Grades 9, 10, 11, 12

Course Description: Baking Essentials expands on the skills learned in Foods I and Foods II, introducing students to ingredients, procedures and processes of basic baking. Students will develop skills in quick and yeast breads, cakes and cupcakes, pastries, pies and cookies. Students will have an opportunity to use their creativity in creating and decorating baked goods and desserts.

CULINARY - 3611 (One Term)

Prerequisite: Foods II

Grades 10, 11, 12

Course Description: Culinary Arts serves as the introduction to the study of the food service industry. Students who enjoy working with food and practicing the techniques of cooking will have greater success in this course. We will begin by exploring chefs of the past and present. We will increase our knowledge of kitchen tools and equipment to improve our cooking techniques, and will apply our skills by preparing complete nutritional meals using meat, poultry and seafood. INTERNATIONAL FOODS - 3613 (One Term)


Prerequisite: Foods II

Grades 10, 11, 12

Course Description: International Foods will give students an understanding of how culture affects recipes and food preparation techniques. Students will plan, prepare, serve, and evaluate a wide variety of dishes typical to many cultures or regions. Student will enjoy tasting new flavors and perfecting unfamiliar processes.

INTERIOR DESIGN - (One Term)

Grades 9, 10, 11, 12

Course Description: Interior Design allows students to analyze their basic physical and psychological needs that housing satisfies, as well as define their personal values and needs in relation to housing. Students will explore different types of housing, interior layouts, color, elements & principles of design, furniture arrangements, lighting, and accessories.

INDEPENDENT LIVING 3606 (One Term)

Course Description: Independent Living is a practical course in character, career exploration, decision making skills, personal and family finance, personal care, and cost effective meal planning. After completing this course, students will be able to access and use resources to make informed consumer and personal financial decisions, and be able to evaluate the impact of decisions on themselves and others.


CHILD DEVELOPMENT 3607 (One Term)


Grades 9, 10, 11, 12

Course Description: This class is designed to introduce students to the world of children. By the end of this course, students will have a better understanding of the ages and stages of development with information on the physical, intellectual, social and emotional needs and characteristics of young children. Students will learn child safety, child care options, effective disciplinary techniques, and creative child friendly activities and snacks. With this class, students have the opportunity to receive hands on experience with an infant simulator and will participate in actual 5K classroom teaching practice.

ASSISTANT CHILDCARE TEACHER 3615 (One Term)

Grades 11, 12

Prerequisite: Child Development

Course Description: Students will plan and conduct several educational experiences for young children in this course. They will integrate strategies that support diversity, investigate the history of early childhood education, summarize types of early childhood programs, summarize the responsibilities of an early childhood professional, and explore early childhood curriculum models. Throughout the semester, students are required to spend 12 hours in a child care center working with children. Students who complete this course proficiently will learn the skills needed to earn an Assistant Childcare Certification from the State of Wisconsin.
