Culinary Arts 11

MCKT-1A-4S Credits: 4

Prerequisite: Culinary Arts 10

Students continue to run the school cafeteria and gain professional cooking experience. They take on greater responsibility in food preparation and will gain a working knowledge of all aspects of the teaching kitchen. Content includes culinary best practices, principles of cooking and operational procedures, artistic elements of the culinary arts, and dietary restrictions and food allergies. Students receive 30 hours of work experience. Student evaluation for this course is based mostly on hands-on practical work.

Culinary Arts 12

Prerequisite: Culinary Arts 11

Students continue to run the school cafeteria and gain professional cooking experience. They take on greater responsibility in food preparation and menu planning. Content includes methods and principles for seasoning and presentation, characteristics and properties of culinary ingredients, menu design and ethnic and multicultural cuisine. Students receive 30 hours of work experience. Student evaluation for this course is based mostly on hands-on practical work.

Food Studies Intro (Food Studies 11)

Credits: 4

This course gives students the opportunity to prepare a variety of exciting dishes while learning new techniques and trying new foods. Students will develop a set of skills that will allow them to safely prepare food for themselves, their friends and family. Skills acquired in this class also transfer well to the workplace. Our many design challenges and cooking competitions enable students to put their new cooking skills on display. Commonly made recipes include Fettuccini Alfredo, Sushi, Perogies and a variety of baked goods.

Food Studies Advanced (Food Studies 12)

MFOOD12-4S Credits: 4

Prerequisite: Food Studies Intro

This is a course for the cooking enthusiast who is eager to become skilled in international and gourmet cuisine. This hands-on applied skills course provides an advanced study of food preparation and builds on skills learned in the Introductory foods course. Learn to budget, shop and cook healthy meals for yourself and family members. Explore advanced techniques such as preservation, poultry processing, pasta making, cooking without a recipe and much more. Multiple design challenges and competitions allow you to put your skills to the test to create unique and delicious meals. Do not leave school without it!

Child Development and Caregiving 11 (Interpersonal and Family Relationships 11)

Prerequisite: None

This course is an excellent introduction for any person interested in working in the field of early childhood education, daycare, preschool, kindergarten, elementary education or other childcare services. This course will explore personal relationships, healthy and unhealthy relationships, the role of families in society, puberty, STIs, contraception, conception, birth, infant development and the social, emotional, intellectual and physical development of children from birth to age three. It will also explore the role of play and the importance of nutrition. The format of this class includes group discussions, sharing of ideas, individual and group projects.


Child Development and Caregiving 12

MCDAC12-4S Credits: 4

Prerequisite: Childcare Development and Caregiving 11

This course is a continuation for any person interested in working in the field of early childhood education, daycare, preschool, kindergarten, elementary education or other childcare services. Students will plan, operate and teach the Rutland Senior Playschool with children enrolled from the community. Discussion and teaching will focus on the social, emotional, intellectual and physical development of children 3-12 years of age. It will also cover the role of play, nutritional needs, feeding practices, caregiving, childcare options and community resources. This course is a unique hands-on experience and a great starting point for those interested in working with young children. Students can receive up to 30 hours of work experience in the playschool and must give consent to a criminal record check done in order to participate in the course.

Fashion and Sewing Intermediate (Textiles 11)

Prerequisite: Fashion & Sewing Intro

This applied skills course is a more advanced clothing construction course. Students will create more difficult and detailed garments such as collared shirts, jackets, dresses, pants, bags, board shorts and skirts. Students learn the basics of pattern drafting and dive deeper into pattern manipulations such as learning to draft basic patterns. Through the applied skills design process they will then create unique garments for themselves or someone else. In this course we also explore textile and clothing choice, evaluating the various environmental, ethical, cultural and functional factors that affect these choices. An upcycling project provides another fun design opportunity for students as they repurpose a textile item. When available, all sewing classes are invited to attend our spring field trip to Vancouver for a fashion show.

Fashion and Sewing Advanced (Textiles 12)

Prerequisite: Fashion & Sewing 11

This applied skills course explores complex garment designs through pattern drafting and manipulation as well as textile manipulation techniques. This course is intended for students wishing to pursue a career in the fashion industry or for the passionate home sewist. Through the applied design framework students may explore the process of creating a garment or fashion line by forecasting, drafting, prototyping, producing and marketing their designs. They will also consider historical, cultural, environmental and social factors and influence the design process. Students can design and make a variety of garments including swimsuits, blazers, prom dresses, formal wear and more. This is an advanced course in sewing construction and as such, students should be familiar with the use of sewing room equipment. When available, all sewing classes are invited to attend our spring field trip to Vancouver for a fashion show.

Fashion Industry: Independent Study

MTXT-11-4S Credits: 4

Prerequisite: Fashion & Sewing Intro

The fashion industry offers many diverse opportunities of employment. This course is intended for students wishing to pursue a career in the fashion industry or for students who are looking to take their fashion and sewing knowledge to the next level. This self directed course allows students to explore passions in fashion and sewing by developing their own projects and researching topics of interest. Students are expected to challenge themselves, increase their sewing skill sets and expand their knowledge of the fashion industry. This course is offered within the advanced sewing block where the sewing teacher will provide oversight, direction and support. This is an advanced course in sewing construction and as such, students should be familiar with the use of sewing room equipment. When available, all sewing classes are invited to attend our spring field trip to Vancouver for a fashion show.
