Cookie Dough Base
110g butter, 100g light brown sugar, 50g granulated sugar, 30ml milk, 1Tsp vanilla extract, 160g plain flour, 1/2 Tsp salt, 100g chocolate chips Cheesecake Topping 480ml Double cream, 500g Cream cheese, 120g Icing sugar, 1tsp Vanilla extract, 100g Chocolate chips
Cream together the butter, light brown sugar, granulated sugar and milk for the base. Then add the vanilla extract, plain flour, salt and chocolate chips and mix together and set aside. Whisk the double cream until firm, add the cream cheese and combine together. Add the icing sugar, vanilla and chocolate chips and mix. Press the cookie dough base into a ceramic dish and spread the toppings on the top. Place in the refrigerator.
