140g softened butter
140 g caster sugar
2 large eggs, beaten
140g self raising flour
1 teaspoon baking powder
2 very ripe bananas mashed
50g icing sugar
Preheat oven to 180 c . Line a 2lb loaf tin. Cream butter and sugar until light and fluffy and slowly add in the beaten egg and a little of the flour. Fold in remaining flour and the baking powder and the mashed bananas. Pour the mixture into prepared tin and bake for around 50 mins or until cooked through. Check the loaf after about 30 to 40 minutes by testing with a skewer. Cool in the tin for 10 mins and them remove to a cooling rack. Mix icing sugar and 2 to 3 teaspoons of water to make a runny icing. Drizzle over the top and place banana on top.
