There's a reason a single visual novel back in 2004 started a series of money printing anime adaptations, spinoffs, and a mobile game. The idea of humans learning magic and summoning anime versions of legendary fictional and non-fictional heroes in history to fight alongside them in a war is very fun concept. The worldbuilding, character motivations, and action scenes are really good at getting the reader invested in the story.

The classic action fantasy visual novel. While very long it does a very good job building its setting, the mystery of the different servants identities, and the unpredictable killing game for the Holy Grail.

The beginning of the rabbit hole that is the Fate universe, and its waifu war. A very interesting read, especially given how old it is : And an absolutely must-read for all of you history fans !

Fate/Stay Night is one of my all time favourite VNs and one of the first I read. Definitely would recommend picking this one up - it's pretty beginner-friendly and, while starting to show its age in some areas, holds up extremely well as one of the best VNs released. Fate has what I'd consider to be the some of the best written characters, with even some of the more minor characters being very well fleshed out. Emiya Shirou is easily my favourite protagonist and the journey through Fate & experiencing his arcs throughout each of the three routes is a very well written and rewarding experience. Minor complains include some pacing issues throughout and the infamously poorly written sex scenes (though they're few and far between).

It's a classic and good for beginners. I like the action and urban fantasy elements. It also has the advantage of having h-scenes be optional (assuming you get Realta Nua). So you can easily read this in pretty much any setting without worrying that someone will see you looking at anime titties. It does have a number of narrative faults, but those are pretty easily ignored in favor of enjoying the story.
