Persan Chignin - 2022 - AOP Savoie

A & M Quenard

Endemic black grape from Savoie, it was first grown in St Jean de Maurienne. It then spread the whole Valley & the Alpine Arc. Perfectly suited for the slopes of the Combe de Savoie, it was the favorite grape variety of the Dukes of Savoie. It disappeared for decades, probably because of its low yield and its susceptibility to disease (mildew). It was rediscovered in centuries-old vineyard. It is still very little cultivated today.

Everything is powerful in this Persian, Intense nose of blackberries, blueberries, a solidly constituted & greedy mouth, a fine & balanced structure. A powerful and persistent wine, very pleasant to taste

A silky, almost velvety mouth on a robust structure but with fine and deep substance. A final freshness which gives a good length and a great persistence on magnificent roasted, chocolate and spicy aromas. The tannins combine softness, delicacy and smoothness

Romain Spay

The grapes are hand-picked and placed directly into vats as whole bunches after harvesting. The vats are grilled to ensure all the grapes are submerged in the juice, maximizing color extraction. After 10 to 12 days, the tannins have developed, and the bunches are pressed. The juice is then returned to the vats to complete fermentation.

This is a structured, powerful, and fruity wine. Intensely red in color, full-bodied, with a long finish, it tends towards a cherry flavor. This wine can be enjoyed upon bottling but also after 5 to 7 years of aging.
