To make homemade pumpkin spice, whisk together 3 tablespoons of ground cinnamon, 2 teaspoons of ground ginger, 2 teaspoons of nutmeg, 1½ teaspoons of ground allspice, and 1½ teaspoons of ground cloves. If you don't have these spices already ground, you can use a spice grinder or a small blender. This blend lasts for about one year. I skip the allspice.
