Ingredients
1/2 cup (125 ml) sesame oil or sunflower oil
6 - 8 cloves of garlic
3 shallots (or other onion)
1 cinnamon stick
3 small pieces of peeled ginger
1 Tbsp cloves
40 ml of red chili flakes
40 ml of roughly chopped peanuts or cashews
1 Tbsp sesame seeds
1 Tbsp white sugar
1/2 tsp salt
Instructions
Finely slice the garlic and shallots and place them in a pot with the oil.
Cook on low heat until the garlic and shallots are crispy (do not overcook).
Strain the oil and transfer it back to the pan.
Add the cinnamon stick, ginger, and cloves and cook on low for 15 minutes to infuse the oil.
Strain the oil and add the chili flakes, peanuts or cashews, sesame seeds, sugar, and salt to the oil.
Transfer to a glass jar and, when cool, refridgerate.
