Make homemade poultry seasoning by blending 2 tsp dried sage, 1.5 tsp dried thyme, 1 tsp dried marjoram, 0.75 tsp dried rosemary, 0.5 tsp nutmeg, and 0.5 tsp black pepper. Combine these dried herbs, optionally grinding them into a fine powder, and store in an airtight container for up to six months.
I don't use nutmeg, but instead, I add basil and oregano, so it is a bit closer to italian seasoning.
