Ingredients
1 diced yellow onion
1/2 diced red or green pepper
6 - 8 minced cloves of garlic
1 or 2 diced jalepeños (keeping the seeds is optional)
4 - 5 medium tomatoes (diced) or one can of diced tomatoes
1 tsp cilantro
the juice from one lime
1 tsp salt
1 tsp cumin (optional)
1 tsp paprika (optional)
Instructions
Combine the ingredients in a pot on the stove and cook on low for 20 - 30 minutes.
Transfer the salsa to a glass jar.
When cool, refrigerate.
