1) Shred or finely slice 1/2 head of cabbage (red or green) and add to a bowl
2) Mix in the following ingredients
2 peeled and grated carrots
1 tsp of chia seeds
1/2 tsp salt
1 Tbsp maple syrup
1 Tbsp vinegar (white wine or apple cider) or lemon juice
2 Tbsps mayonnaise
3) Refrigerate for one hour before serving
