Ingredients:
1 pound ground lamb (or a mixture of lamb and beef)
1 small onion (finely chopped)
2 cloves garlic (minced)
1/4 cup fresh parsley (finely chopped)
1 tablespoon red pepper flakes (adjust to taste)
1 teaspoon cumin
1 teaspoon paprika
Salt and pepper (to taste)
4 skewers (metal or soaked bamboo)
Olive oil (for brushing)
Instructions:
1. Prepare the Kebab Mixture:
In a large mixing bowl, combine the ground lamb, finely chopped onion, minced garlic, chopped parsley, red pepper flakes, cumin, paprika, salt, and pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
2. Shape the Kebabs:
Divide the mixture into 4 equal portions. Wet your hands to prevent sticking, and shape each portion around a skewer, pressing firmly to ensure it adheres well. The kebabs should be about 1 inch thick.
3. Preheat the Grill:
Preheat your grill or grill pan over medium-high heat. Brush the grates with olive oil to prevent sticking.
4. Grill the Kebabs:
Once the grill is hot, place the skewers on it. Grill for about 4-5 minutes on each side, rotating occasionally until the kebabs are cooked through and have a nice char.
5. Serve:
Remove the kebabs from the grill and let them rest for a couple of minutes. Serve hot with flatbread, fresh vegetables, and your favorite sauces (like yogurt or tahini). Enjoy your delicious Adana Kebab!
