Ingredients:

1 pound boneless, skinless chicken thighs or breasts
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon ground cumin

For the Tzatziki Sauce:
1 cup Greek yogurt
1/2 cucumber, grated and drained
2 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
1 tablespoon lemon juice
Salt (to taste)
For Serving:
Pita bread or flatbreads
Sliced tomatoes
Sliced red onion
Shredded lettuce
Feta cheese (optional)
Instructions:
1. Marinate the Chicken:
In a bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, salt, and pepper. Add the chicken, ensuring it’s well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
2. Make the Tzatziki Sauce:
In a separate bowl, mix together the Greek yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and salt. Stir until well combined. Refrigerate until ready to use.
3. Cook the Chicken:
Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.
4. Assemble the Gyros:
Warm the pita bread or flatbreads. Place sliced chicken on the bread, then top with sliced tomatoes, red onion, shredded lettuce, and a generous dollop of tzatziki sauce. Sprinkle with feta cheese if desired.
