Ingredients:
1 lb (450 g) chicken breasts, thinly sliced
8 oz (225 g) mushrooms, sliced (such as cremini or button)
1 medium onion, diced
2 cloves garlic, minced
1 cup heavy cream
1/2 cup balsamic vinegar
1 tablespoon olive oil
1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Prepare the Chicken:
Season the sliced chicken with salt, pepper, and dried thyme.
Cook the Chicken:
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Sauté the Vegetables:
In the same skillet, add the diced onion and sliced mushrooms. Sauté for about 4-5 minutes until the mushrooms are tender and the onions are translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.
Make the Sauce:
Pour in the balsamic vinegar and scrape the bottom of the skillet to deglaze, stirring to incorporate any browned bits. Allow the vinegar to simmer for about 2-3 minutes.
Add Cream:
Reduce the heat to medium-low and stir in the heavy cream. Mix well and let it simmer for about 2-3 minutes until the sauce thickens slightly.
Combine Chicken and Sauce:
Return the cooked chicken to the skillet, stirring to coat it in the creamy balsamic sauce. Cook for another 2-3 minutes to heat through.
Serve:
