Ingredients:
1 pound salmon fillet, skin removed, cut into bite-sized pieces
1 cup Panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1 tablespoon garlic powder
1 teaspoon paprika
Salt and pepper (to taste)
Vegetable oil (for frying)
For the Bang Bang Sauce:
1/2 cup mayonnaise (vegan if desired)
2 tablespoons sweet chili sauce
1 tablespoon sriracha (adjust to taste)
1 teaspoon lime juice
Optional: chopped green onions for garnish
Instructions:
1. Prepare the Salmon Bites:
In a bowl, season the salmon pieces with salt, pepper, garlic powder, and paprika. Set aside.
2. Set Up Breading Station:
In one shallow dish, place the flour. In another dish, whisk the eggs. In a third dish, place the Panko breadcrumbs.
3. Bread the Salmon:
Dredge each piece of salmon in flour, shaking off the excess. Then dip it in the beaten eggs, and finally coat it with Panko breadcrumbs, pressing gently to adhere.
4. Fry the Salmon Bites:
In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. Once hot, carefully add the salmon bites in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
5. Make the Bang Bang Sauce:
In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the spice level to your liking.
6. Serve:
