Ingredients:
1 pound ground chicken
1 cup breadcrumbs (preferably Panko)
1/2 cup grated Parmesan cheese
1/2 cup diced ham
1/2 cup shredded Swiss cheese
1/4 cup finely chopped onion
2 cloves garlic, minced
2 large eggs
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup milk
1 tablespoon Dijon mustard (optional, for added flavor)
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
2. Prepare the Meatloaf Mixture:
In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, diced ham, shredded Swiss cheese, chopped onion, minced garlic, eggs, thyme, salt, pepper, milk, and Dijon mustard (if using). Mix until well combined, but be careful not to overmix.
3. Shape the Meatloaf:
Transfer the meat mixture to the prepared loaf pan and shape it into a loaf. Smooth the top with a spatula.
4. Bake:
Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C) and the meatloaf is cooked through. If desired, you can broil for the last 3-5 minutes to get a crispy top.
5. Rest and Serve:
Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Serve warm and enjoy your delicious Chicken Cordon Bleu Meatloaf!
