Ingredients:
12 oz (340 g) pasta (penne or rigatoni works well)
1 lb (450 g) ground beef or Italian sausage
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup fresh parsley, chopped
1 large egg
2 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
2 cups marinara sauce (store-bought or homemade)
2 cups shredded mozzarella cheese
Extra parsley for garnish
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a large baking dish.
Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain and set aside.
Make the Meatballs: In a large bowl, combine the ground beef or sausage, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined. Form the mixture into small meatballs, about 1 inch in diameter.
Brown the Meatballs: In a large skillet over medium heat, add a little olive oil. Cook the meatballs in batches until browned on all sides, about 5-7 minutes. They don’t need to be fully cooked through, as they will finish cooking in the oven.
Combine Ingredients: In a large mixing bowl, combine the cooked pasta, marinara sauce, and half of the shredded mozzarella cheese. Gently fold in the browned meatballs.
Assemble the Bake: Pour the pasta and meatball mixture into the prepared baking dish. Top with the remaining mozzarella cheese.
Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
Garnish and Serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with extra chopped parsley before serving.
