Instructions:
1. Prepping and Cooking Potatoes:
Begin by boiling the baby potatoes in a large pot of salted water until they are just tender enough to pierce with a fork, about 15-20 minutes.
Drain the potatoes and let them cool slightly. Heat a griddle or large pan over medium heat.
Place the boiled potatoes on the griddle and smash them flat with a fork or a potato masher to create more surface area for crisping.
