Sweet potato stir fry

What you need

Sweet potato rounds: 4 cup

Olive oil: 2 tablespoon

Urad dal: ½ tablespoon

Mustard seeds: ½ teaspoon

Turmeric powder; ¼ teaspoon

Salt: ½ teaspoon

Milagaipodi: 1 tablespoon

Curry leaves: 2 sprig

Water: 1 cup

How I made

Wash and peel the skin of sweet potato and cut into thin rounds and set aside.

In a skillet heat oil and add mustard seeds, urad dal, curry leaves when mustard seeds starts to crackle add sweet potato rounds , salt and water and cook until they become soft not mushy. It took about 13 minutes.

To this add milagaipodi and mix everything until each sweet potato gets coated with spice powder.Switch off the flame

Enjoy with rice and curry.
