What you need
Large egg white: 4no
Whole egg: 1 no
Garlic clove: 1 no
Red onion: ¼ (Chopped finely)
Olive oil: 1 tablespoon
Serrano pepper: 1 tablespoon (chopped into thin rounds)
Salt: ½ teaspoon ( I used sea salt)
Tomato: 1 no
coriander leaves: 2 tablespoon finely chopped
How he made
In a small bowl separate yolk from 4 eggs and add and also a whole egg. Lightly beat with salt and set aside.
Heat oil in skillet and add chopped onions when they become slight change color for about 3 minutes add chopped green chilies and fry 2 minutes. Then add chopped garlic and fry for another 2 minutes. To this add beaten eggs and cook for about 2 minutes with constant stirring, when eggs almost cooked add chopped tomato and half of chopped coriander leaves and cook for another 2 minutes. Then switch off the flame and add rest of coriander leaves.
Enjoy with roti, tortillas or bread.
