cliantro chutney

What you need

Cilantro /coriander leaves: 1 cup

Grated coconut: ¼ cup

Red onion: 2 tablespoon (chopped finely)

Green chili: 1 no

Red chilies: 2 no

Tamarind: a small piece (adjust to taste)

Olive oil: 2 teaspoon

Mustard seeds: ¼ teaspoon

Urad dal/de-skinned split black gram: 1 teaspoon

Salt: ¼ teaspoon or to taste

Water: 1/4 cup

How I made

In a skillet add a teaspoon of oil and add onion, green chili and red chili and fry for about 4 minutes. To this add grated coconut and fry for another 3 minutes. To this add cilantro and fry until they wilt and change the raw smell. Remove from fire and set aside for cool.

When it is cool enough to touch add tamarind, salt and water to above mixture and grind into a smooth paste and set aside.

In a small skillet add rest of oil and add mustard seeds, urad dal and when mustards seeds starts splutters switch off the flame and add to ground paste.

Enjoy with rice pancake or rice as you wish.
