Chicken legs with my homemade rub modified for chicken.
Forgot to take picture of making the fatty. A Fatty is a pork sausage roll wrapped in Bacon and smoked.
I like to up-it one and make a roll stuffed with Cream-cheese, peppers, garlic, onions and shreded cheese.
Cooking on the CG with Royal Oak and Hickory wood.
Fatty done, stuffed with orange and red peppers, garlic, onion and cream cheese and co-jack cheese. Rapped with bacon and homemade rub on top.
Legs done and ready to eat or add sauce.
Plated up with corn and homemade hashbrowns with peppers and onions.
Chicken rub is the Basic Rub minus the cayenne pepper and add Poultry seasoning.
To make the fatty:
Take your pork sausage and spred in a "Jelly-roll" pan lined with plastic wrap.
Chill the cream cheese in freezer to make very firm and using a cheese slicer cut the cream-cheese in THIN paper slices and lay over the sausage leaving the edges as just sausage to seal
Add the rest of ingedients on
Roll the sausage using the plastic wrap to tighten making a "Pin-Wheel" (Do not leave plastic wrap in roll) pull the plastic wrap back as you roll along
Once the roll is done the area of plastic wrap you lay bacon down and roll the log back over to cover with Bacon.
Use tooth-picks to hold the bacon in place and sprinkle with the Basic Rub.
